Alumni Dine with Scott Gottlich ’94

On Thursday, May 12, 2016, 80 alumni and guests joined Chef Scott Gottlich ’94 at his restaurant, 18th & Vine, for the final Alumni Leadership Speaker Series event of the 2015–2016 school year. Over a three-course meal, Scott shared a behind-the-scenes look into his Kansas City-style barbecue restaurant and a special glimpse at the restaurant industry.

Located in a Victorian house in the Maple Avenue area, 18th & Vine is a partnership between Scott and Pitmaster Matt Dallman, a unique marriage of traditional, Kansas City-style barbecue and creative, chef-driven dishes.

Alumni and guests enjoyed their choice of mouthwatering barbeque staples, including, ribs, brisket, pulled pork, chicken, and cauliflower steak. As guests enjoyed their main course, Scott shared his unique journey and the impact his St. Mark’s education had on his life.

“Looking back at everything I’ve done, St. Mark’s really set me up for success,” Scott said. “It was the whole culture of delayed gratification, learning to organize and be focused, that positioned me ahead of the curve.”

As a student, Scott competed on several of St. Mark’s state championship wrestling teams and, after graduating, he went to Syracuse with the intention of wrestling in the Olympics. He later transferred to Oklahoma, where he studied history and contemplated entering either law school or culinary school, eventually deciding on the latter.

After earning his culinary degree at Johnson & Wales and working in some of the best French kitchens across the country, Scott opened his first restaurant, Bijoux, in 2006. Bijoux quickly became a national favorite, collecting accolades including “Top 10 Hottest New Restaurants in America by Bon Appetit, “Best New Restaurants of the Year” by Texas Monthly, and “Best Chefs” by Dallas Morning News. Scott was listed among the "2014 The Best Chefs in DFW" by Dallas Morning News for his work at both Bijoux and The Second Floor Bistro & Bar at the Westin Galleria.

The Dinner with Scott Gottlich ’94 was the latest installment of the Alumni Association's Alumni Leadership Speaker Series. Hosting events throughout the year, the Series aims to provide Marksmen with lifelong learning opportunities, hearing from guest speakers in a variety of fields and interests.
